During one of the darkest times in my life, my beautiful cat Ninners did this to me. It was enough for me to pick up the phone and call someone to get help. That furry little shit means the world to me.
150g unsalted butter (melted) 1 cup Nestle Baking cocoa (I have used others, but this one is the best) 4 eggs 2 cups sugar (I use caster sugar) 1 teaspoon vanilla essence ¾ cup plain flour 1 teaspoon baking powder 250g of white choc bits (Or nuts I suppose?)
Preheat oven to 160 °C. Line an 18cm x 28cm tin with baking paper
Melt butter and stir in NESTLE Baking cocoa. Cool slightly.
Beat in eggs. Stir in sugar & vanilla.
Sift flour and baking powder together, add to cocoa mixture and stir until thoroughly mixed, but don't beat.
Mix through white choc bits.
Spoon mixture into tin, evenly as it is quite thick.
Bake in preheated oven for 50-55 mins or until just firm when pressed in the centre. It will be moist and slightly chewy. Cook a little longer (5 mins) if you prefer a more cake like brownie or crunchier sides (watch carefully so they not burnt).
Cool in the tin for 20 minutes before turning out onto a wire rack to cool. Serve cut into squares dusted with icing sugar.
TIP: I usually cool them IN the oven, which helps make them gooey with the edges crispy, for about 30 mins or so. Once the top is a little springy, I just turn the oven off and leave the tin in there.
