The Poblanos have a great flavor but don't add much heat
The Chipotle chili in Adobo sauce adds huge smokey flavor and can add a lot of heat. You can split the chili open and scrape out the seeds to reduce the heat some. You want some of that Adobo sauce, it's sooo good.
