These were at Tailor. Eben Freeman, who came up with these, is now beverage director for Michael White -- his bar at Ai Fiori at the Setai is really really good. Booker & Dax doesn't do solids, but they have a lot of really crazy techniques. I hear the WD-50 bar does some similar things.
