2lbs leg of lamb cut into stew sized chunks 2 medium onions diced 4 medium carrots sliced 1 bunch of celery diced 10 mushrooms sliced 6 cloves garlic minced 4 cups beef stock 1 cup water 1.5 TBS kosher salt, 1 tsp black pepper, 1 tsp coriander, 1 tsp cumin, 1 tsp dried sage, 1 tsp dried thyme, 2 tsp dried parsley, 2 tsp sweet paprika 1 TBS tomato paste 1/2 cup Orzo
Brown lamb chunks, remove and sweat veggies with all spices and herbs for 15 minutes. Add in tomato paste and toast for a bout a minute, add back in meat and stock and water. Bring to covered boil, reduce to simmer for 45 minutes. Add in orzo and leave uncovered on simmer for another 15 minutes, stirring every once in a while to make certain orzo doesn't stick to bottom. Turn off heat and leave covered for 5-10 minutes, then serve.
