Or damn near...

The cheesecake I've been making for years. My mom combined two recipes - I'm not sure which two. Here it is:

Preheat oven to 400 degrees.

Crust:
1 1/2 c graham cracker
6 tbs butter
2 tbs sugar

Melt butter. Mix graham cracker crumbs and sugar. Add to melted butter, and wet all the crumbs.

Grease (butter) springform pan. With hands, add graham cracker crumbs to pan and stick to sides first, then bottom, to create crust. Place in freezer.

Filling:
2 1/2 lbs cream cheese
1 3/4 c sugar
3 tbs flour
1 1/2 tsp orange and lemon zest
1/4 tsp vanilla
5 eggs
2 yolks
3/4 c heavy cream

Let cheese sit on counter or in bowl for a few hours to soften/bring to room temp.

Add sugar and combine the cheese and sugar together.

Add eggs one by one, mixing together.

Grate what feels good worth of orange zest and lemon zest into mixture.

Add flour and vanilla, mix. (Add a little more vanilla than specified.)

Mix into nice batter. THEN add the heavy whipping cream. Hand mix - no air.

Pour into crust.

Bake at
400 degrees for 12 minutes.

Reduce heat to 200 degrees. Bake at 200 for approximately 2-2 1/4 hours. Cake is done when middle doesn't jiggle as if wet.

Remove from oven, cool on counter for a few hours.

Place in refrigerator overnight.

Serve with homemade whipped cream (heavy whipping cream, add some sugar, beat until firm)
