@cristin Gravy is mostly water when you come down to it. Scrumptious turkey flavored water, but water nonetheless. The only fat is in the roux/thickener.
@cristin guessing that varies wildly by stuffing recipe. At one extreme there's northeastern style made with croutons, seasonings, and broth, it's mostly carbs and is kind of like a savory bread pudding. At the other extreme is a southern style cornbread and sausage dressing with chopped nuts and at least three different kinds of animal fat.
The thing that is always helpful to me re: Thanksgiving is that even if I ate 3000 calories of dinner, I'm still only nudging the needle up a pound. Like, that is not a binge I would be planning but the worst case scenario for someone with normal health is not really that bad, it's mostly about habits and the personal ethics of splurge/cheat/binge days. This is a helpful infographic.

I really don't understand the fetish for paying absolutely no attention to the value of what you eat. Especially when it goes hand in hand with agonizing about your "lack of control." Getting a handle on this stuff is not that hard, and it feels pretty good. And I find that helps me *enjoy* my food more (not to mention guilt-free).
